Mozzarella & Green Zucchini Croquettes

Here we propose the zucchini and mozzarella croquettes, tasty and suitable as an appetizer, to accompany an aperitivo or as a  practical lunch to take along at the office. Unlike the common recipes, the zucchini are cooked in a pan before being mixed with the rest of the ingredients. This process and the touch of mozzarella makes them particularly soft and scrumptious.


To make the zucchini and mozzarella meatballs start to remove the zucchini and cut into chunks. In a non-stick pan, season the oil with the garlic clove and add the zucchini. Let them cover until they have become sufficiently tender to be crushed with a fork. Let it cool. Collect them in a bowl with the Parmesan, breadcrumbs, egg, mozzarella cut into very small cubes, marjoram, salt and pepper.


Mix everything with your hands until you get a homogeneous mixture, then form some small croquettes and pass them in breadcrumbs to cover them completely.

Fry the zucchini and mozzarella croquettes in boiling oil at 180 ° until they are golden brown, drain them with a perforated  spoon and serve.
