Pomegranate & Persimmon salad

The salad with pomegranate and persimmon-apple is a unique tasty and healthy dish. The persimmon, also known as Sharon fruit, is a fruit rich in plant proteins and vitamins, while the pomegranate is a very powerful antioxidant and also helps to face the rigors of winter.

Ingredients:

Wash and chop the radicchio with your hands. Collect it in a bowl with the Lettuce Mix, a little oil, a pinch of salt and stir.

Toast the fennel seeds with the cumin and reduce them to powder in the mortar.

Crumble the pistachios, always in the mortar. Cut the pomegranate in half and tap on the back with the handle of a wooden spoon to shell it more easily.

Remove the top of the persimmon and cut the pulp into slices that are not too thin.

Assemble the dish with radicchio and Lettuce on the bottom, cover with the slices of persimmon and the pieces of mozzarella. Add the mix of spices, pistachios and pomegranate seeds and drizzle with extra virgin olive oil, salt and pepper.
