Potatoes & Scarmorza Skewers

A tasty, easy and quick recipe. These "Spiedini" (italian word for skewers) of potatoes, scamorza and bacon could be a delicious starter, tasty and fun that you bring to the table in just over 30 minutes. Combined with a rich mixed salad can become a main dish for a quick family lunch or a light dinner. It's a must try!

Ingredients:

FOR PASTA BRISÉE

  • 4 potatoes
  • 300 g thick slices of pancetta (Bacon)
  • 300 g scamorza
  • Sage Leaves
  • Extra virgin olive oil
  • Fresh Thyme
  • Salt
  • Pepper
  •  

    Start by washing the potatoes very well and placing them in a saucepan with cold water and salt. Boil them for about 25 minutes or otherwise until they become tender while still being firm. Drain and leave to cool, then peel. When they are completely cold, cut them into 8 mm slices.

    Cut the smoked scamorza into slices and start to compose the skewers, first sticking a slice of potato and then of bacon (reducing it in more segments compatibly with the dimensions of the other ingredients). Add the scamorza and 1 sage leaf.  Proceed alternating the ingredients in this way until they run out. Place them in a greased pan with a little olive oil and sprinkle with salt, pepper and fresh thyme.

    Cook in a preheated oven at 220 ° for about 25 minutes, then pass under the grill for a further 5 minutes or until golden brown. Baked and serve the skewers of potatoes, scamorza and bacon hot.
