Strawberry Semifreddo

Semifreddo is the italian word for ice cream cake, it's not frozen but not even soft, it's a refreshing dessert thought for summer holidays. Light and healthy you can choose the fruits to add and your kids will love it!

Start preparing the custard: combine milk, cream, vanilla, lemon and half of the sugar in a saucepan. Bring to a boil. Prepare a batter with the starches, the second half of the sugar, salt and egg yolks. Stir well until a smooth mixture is obtained. When the milk comes to a boil add the batter, mix well and cook over a fire. When the cream has thickened remove from heat and pour it on a baking sheet lined with baking paper, then cover with food foil and cool quickly. (Cool hint: In the fridge it will last 2 days at + 4 °)

Then it's time to prepare the meringue. In the planetary, whisk the egg whites with 50 grams of sugar. Meanwhile in a pan pour the water and 150 grams of sugar and bring it to 120 degrees. Pour the sugar flush into the mass of whipped egg whites and keep turning the whisk until completely cool. For strawberry coulis, blend the strawberries together with the sugar. Pour into a saucepan and cook over low heat for about 5-8 minutes, until the mixture has become thicker. Store in a can in the refrigerator until ready to use.

Pull out the custard from the refrigerator, soften it with a spatula and mix it together with the meringue, then gently add the fruit puree and finally lighten with the semi-whipped cream, incorporating it with a spatula with movements from the bottom to the top.

Place in the mold the semifreddo batter wrapped in cling wrapped and immediately freeze. Leave in the freezer at least 6 hours before serving.
Remove the semifreddo from the cling wrap and the mold, cut it into slices. Lay the semifreddo slices on the serving plates, decorate with the coulis and fresh strawberries. The time required for cutting and decorating will bring the semifreddo to the ideal consumption temperature (-10 / 15 °)
