Fresh Black Winter Truffle is usually cultivated from early December to 15 March. The smell is very aromatic, but at the same time balanced, without being too pungent; the taste is delicious so much so that it is also called sweet black truffle.

It can be recognized by its usually roundish shape and, in minor cases, irregular, while the warts are pyramidal and black.
The inner part is also black tending to purple with whitish veins.
