Anchovy fillets caught in the Cantabrian Sea, the most sought after origin for the connoisseur. Perfect pairing with burrata or as a pizza topping, the Cantabrian anchovies are less "salty" compared to standard anchovies and can be consumed as they are directly from the can. These anchovy fillets are thick and tasty, they have a pinkish colour tending to a tobacco hue and a larger size. Anchovies are caught from April to June when their sensory characteristics are at their finest. Thanks to its cold, plankton-rich waters, anchovies grow larger and build up reserves of fat. The fillets and carefully trimmed by the end and the result is a beautifully trimmed portion of fish with spines to give us this 28g tin.
