Jamón Ibérico 100% is an incredible ham made from free-range, acorn and pasture-fed pork. Cured for over two years (depending on weight), these hams come from an ancient breed of pig, Cerdo Ibérico. They spend the first stage of their life on the farm, feeding on natural cereals until they reach a weight between 40kg and 50kg and then enter the pastures. There they enjoy an exquisite diet composed of a selection of cereals as well as pastures, tubers, roots and other natural resources, till it reaches a weight between 170kg and 180kg. This carefully planned and executed process gives the meat a rich nutty flavour with a tender texture.
- Inside, the meat has different shades, ranging from deep red in the most cured part to bright cherry red, with a shiny ivory-coloured fat.
- It is rich in proteins, vitamin B1, iron, zinc, magnesium, folic acid and vitamin E (an excellent antioxidant).
