The unique 100% Ibérico de Cebo de Campo ham comes from the hind limb of the Iberian breed of pigs selected from birth. The first stage of their life takes place on the farm, feeding on natural cereals till they weigh between 40kg to 50kg, and then they access the meadows. There they enjoy an exquisite feeding composed of cereals, grasses, tubers, roots and acorns; reaching a weight between 90kg to 100kg in early October. It's also when the montanera begins - so as the acorns fall and constitute, the pigs are only fed until they reach an approximate weight of 180kg as an adult. The ham is ruby red in colour and has a high percentage of oleic acid which helps to maintain an adequate level of cholesterol in the blood, in addition to being rich in protein, vitamin B1, iron, zinc, magnesium, acid folic acid and vitamin E. The profiling of the meat is meticulous and strict, providing the product with homogeneity.
- The minimum curing period of the meat is 32 to 48 months, depending on the volume of the piece and it has a delicate aroma, with a touch of sweetness due to its low salt content and careful curing
