The fantastic Jamon 100% Iberico W/Bone Acorn Fed Pata Negra comes from the hind limb of the Iberian breed of pigs selected from birth. They spend the first stage of their life on the farm, feeding on natural cereals until they reach a weight between 40kg to 50kg, and then they access the meadows. There, they enjoy an exquisite feeding composed of cereals, grasses, tubers, roots and acorns till they weigh around 90kg to 100kg during early October. It's also when the montanera begins - so as the acorns fall and constitute, the pigs are fed exclusively until they reach an approximate weight of 180kg as an adult. Due to their strict diet, they have an elongated and stylized cane with golden and fluid fat on the outside, while the inside shows a pink and melting appearance that floods the mouth with intense and prolonged flavour. The minimum curing period of the meat is 32 to 48 months.
