If there is a sausage that has always been hanging in the cellars of the Trentino valleys, this is the luganega. When a friend comes to visit us, we take him to the cellar to savor a few slices of luganega in company. It is produced in numerous variations according to local and family traditions, but our grandfather left us written to make it with shoulder, bacon and pork neck not too finely minced and spices mixed according to precise quantities and proportions, using only pork. Trentino born, raised and slaughtered locally.
It is ideal for a snack with slices of rye or white bread, for an aperitif on its own or in mixed platters.
