Pork meat and pork fat are minced with a heavy dose of local hot chilli - 23% of the paste - then left to mature until the mixture turns deep red and soft enough to spread with a knife. The heat is real, but it carries flavour rather than masking it. Spread it on warm bread or bruschetta, dollop it over pizza before or after baking, or melt a spoonful into a tomato sauce for pasta, where it dissolves and seasons the whole pan. It is also good stirred through scrambled eggs or pushed under the skin of a roasting chicken. Supplied in a 200g glass jar.
