Alce Nero Khorasan wholemeal flour is 100% Italian. Khorasan wheat is a delicate grain which requires fertile soil and a warm climate in order to achieve satisfactory growth. It has always been cultivated in the Mediterranean area, especially in North Africa, Spain and Italy.
The areas of cultivation where it best expresses its characteristics in Italy today are the regions of Sicily and Puglia. It is especially tall (140-160 cm) and precocious, guaranteeing good competition against weeds.
- Only organic wheat cultivated in Italy is used for Alce Nero's Khorasan wheat wholemeal flour.
- A slow grinding process ensures low processing temperatures, thus preserving the nutritional properties of the wheat germ. Stone grinding also results in flour with irregular grain size.
- This stone-milled Khorasan wholemeal flour is ideal for preparing bread and pizza.
