Parmigiano Reggiano Cheese: the production area is mainly and traditionally located in the provinces of Parma and Reggio Emilia, although it has been extended to the edges of some surrounding provinces. 

About the Product

  • Until a few decades ago, production took place in the typical "octagonal" toll booths that guaranteed a particular air circulation, and even today some archaic traditions have been maintained in the processing such as the use of copper, instead of stainless steel, to the boilers in which the cheese is prepared.
  • Seasoning, if carried out in optimal conditions, can also happily exceed four years (however, the cheese needs at least 30 months of seasoning to best express its potential): to test the maturation of the forms, a needle is used to screw shape "turned" deep in the dough.
