Pecorino Toscano (Tuscan pecorino) is a firm-textured ewe's milk cheese produced in Tuscany. Since 1996 it has enjoyed protected designation of origin (PDO) status. Aged for over six months, Pecorino shows a hard and glossy crust, as it is greased with olive oil. The taste is persistent but sweet and palatable, with variegated and well-balanced flavours.
Pecorino Toscano is sturdy and nutty with a hint of salt and underlying savoury and sweet flavours that intensify with age.

Well matured Pecorino Toscano is widely used across Italy as an alternative to parmesan for grating over a wide range of dishes, especially pasta or soups.
