Tortelloni are stuffed pasta, common in Northern Italy, A classic traditional format filled with soft ricotta cheese and spinach leaves. Excellent served with tomato, flavourful meat sauces, cheese or vegetable-based dressings. The bronze die extrusion, done at a slow pace, at a low temperature, with a naturally rough surface, realises a traditional pasta sheet which is like the artisanal one, with just the right degree of porosity and the aroma of flour and eggs, with a good appearance and rough enough to absorb with and retain any sauce and topping
