The meat is bright red in its raw state but when cooked it turns light brown to greyish-tan, It has a firm texture, and contains the valued Omega 3 oil. This yellowfin tuna is caught by longline vessels in the Pacific Ocean, a dolphin-safe fishing method. It is a popular replacement for the endangered Bluefin tuna.
