Bresaola Wagyu Angus - Air-Dried Cured Beef 50g

Casinetto Butchery cures this bresaola at its own UAE production, working from lean Wagyu Angus beef with nothing more than salt, natural flavourings and potassium nitrate before a slow air-dry firms the meat. It slices to a deep garnet red, fine-grained and very lean, with the clean savour that separates air-dried beef from anything smoked or cooked. Eat it raw and cut thin: dressed with lemon, extra virgin olive oil and rocket, shaved over burrata or buffalo mozzarella, folded into a piadina with stracchino, or laid out carpaccio-style with grana shavings and cracked black pepper. Supplied chilled in a 50g pack with a four-day shelf life.
