Fiasconaro's collaboration with Dolce&Gabbana puts a Sicilian panettone in a collector's tin, and this one is built on caramel: soft salted caramel cubes at 11% through a naturally leavened dough, caramelised white chocolate at 8.5%, and a white chocolate coating over the top. The salt is what keeps it from cloying. The tin takes its design from Giacomo Serpotta, the Palermo stuccoist of the Sicilian Baroque, which is the reason this one tends to be bought as a present rather than for the house. Panettone is ready to eat. Let it come to room temperature and, if you want it as it is served in Italy, warm the slices very briefly so the butter in the dough softens and the aroma opens up. Cut it in wedges from the top and serve with coffee or a sweet Marsala. The tin is worth keeping.
