Pressed from the native olive varieties of its local territory, Primolio by Giachi is a first-cold-extraction extra virgin olive oil harvested at peak partial ripeness between late October and early November. Immediately milled upon arrival at the press, cotton-filtered, and stored in cool conditions, it delivers exceptionally low acidity and an aromatic complexity that has earned it a loyal following among gourmets worldwide.
- An intense golden-yellow colour with light green nuances; on the nose, broad and enveloping with notes of artichoke, wild thistle, celery, and lettuce, with prominent rosemary and wild mint.
- On the palate, refined and full of character — tones of unripe tomato, a finish of dried fruit, and bold, well-balanced bitter and spicy notes.
