The white fig is the one to use for jam: pale green skin, very sweet pulp, and enough body to give the preserve its consistency without extra thickening. Callipo cooks it at 75% fruit with sugar and lemon juice and nothing else beyond a touch of lactic acid. The classic pairing is with aged cheese - pecorino, a well-matured parmigiano, a hard goat's cheese - where the sweetness cuts the salt and the seeds add texture. It is equally good on breakfast toast, with yoghurt, or spooned over a cheeseboard at the end of a meal. Supplied in a 280g glass jar. Product of Italy.
