Rummo makes its Maxima version in Benevento from durum wheat semolina with yellow pea flour, which keeps the spiral firm instead of letting it go soft at the edges. The shape earns its keep with anything chopped or loose - pesto worked into the grooves, a tomato and olive sauce, tuna and capers - and it is the shape to reach for when the pasta is going to be eaten cold, because it holds dressing without turning heavy.
