Gorgonzola PDO Spoonable - Italian Blue Cheese 200g

Gran Leonardi's spoonable Gorgonzola carries the PDO mark, which ties it to the territory the Gorgonzola consortium governs and to the rules it sets for how the cheese is made. Almost all of it - 98.26% - is full-cream pasteurised cow's milk drawn from farms inside that territory, and the spoonable style is matured to stay soft and sweet rather than sharp, the blue veining running fine through a pale paste. It softens to a texture you spoon rather than slice: good on warm bread or focaccia, stirred into a risotto at the end of cooking, melted into a sauce for gnocchi or short pasta, or served with honey and walnuts to close a meal.
