Live Lupini Clams Striped Venus from Italy - 500g

Lupini are the small ones, wild-caught from the Adriatic rather than farmed. They are firmer than a verace and taste more of the sea, which is why Italian cooks use them where the clam is meant to season the dish rather than sit on top of it - through a risotto, in a soup, or simply in the pan with garlic and chilli so the liquor they give off becomes the sauce. They come live in a sealed tray, so nothing leaks into the fridge and the date is on the label, with ten days from packing. 500g is plenty for two as a main.

Store in the refrigerator between +2 and +8 degrees C. These animals must be alive when sold. Packaged in a protective atmosphere - do not puncture the package. Any liquid in the pack is completely natural. Do not submerge in water and never freeze.

A 500g sealed protective-atmosphere tray, supplied in cartons of 4 trays.

These are alive, so keep the tray sealed and in the coldest part of the fridge until you cook them, and do not sit them in water. Rinse under cold running water first. Throw away any shell that is cracked, or that stays open after a sharp tap. Cook them through - a few minutes in a covered pan is enough - and throw away any that have not opened.
