Live mussels from the Bay of Castro in Salento, where 34 freshwater springs run into the sea - the growers there put the sweetness down to that mix of fresh and salt water. The useful part for you is that they arrive debearded and cleaned, so there is no scrubbing at the sink: rinse them, check them over and get the pan hot. They travel alive in a sealed tray rather than a net, which means nothing leaks into the fridge and the date is printed where you can read it. A kilo is dinner for two with bread, or a starter for four. White wine, garlic, parsley, and something to mop up the broth.

These are alive, so keep the tray sealed and in the coldest part of the fridge until you cook them, and do not sit them in water. Rinse under cold running water first. Throw away any shell that is cracked, or that stays open after a sharp tap. Cook them through - a few minutes in a covered pan is enough - and throw away any that have not opened.
