Made by Casinetto's Kitchen here in the UAE and frozen the day it is made. The base is Caputo Saccorosso Red 00, the reinforced flour the pizzerias of Naples use, slow-proved and worked soft so it bakes with an open crumb and the puffed, blistered cornicione the style is known for. On top, tomato pulp and Valle Verde fiordilatte mozzarella and nothing else - the Margherita as Naples makes it. Bake it straight from the freezer - no defrosting - at 190C for four to five minutes, until the cheese has melted through and the crust is golden and crisp. One 30cm pizza is a generous single serving, or two plates with a salad alongside. 480g, frozen. Made in the UAE.
