The base is Caputo Saccorosso Red 00, the reinforced flour the pizzerias of Naples use, slow-proved and worked soft so it bakes with an open crumb and the puffed, blistered cornicione the style is known for. On top, tomato pulp, Valle Verde fiordilatte and halal beef salami, sliced thin so the edges cup and crisp in the oven. Bake it straight from the freezer - no defrosting - at 190C for four to five minutes, until the cheese has melted through and the crust is golden and crisp.
