Salumi Cinque Stelle make these burgers in Italy from coarsely ground pork, seasoned the way a northern Italian butcher would rather than an American grill house: pepper, garlic and a little nutmeg, with nothing in the mix beyond what holds the patty together. Pork is 86% of it. Each burger is a single 130g patty, thick enough to hold its juice through a hard sear and sized for one person in a bun. Cook it from frozen or thawed, on a griddle, in a pan or over coals, and finish it the Italian way - provola or taleggio melted over the top, grilled radicchio alongside, a plain soft roll rather than a brioche bun. Cook from frozen or fully thawed. Grill, pan-fry or barbecue over a medium-high heat, turning once, until the burger is cooked right through with no pink meat remaining and the juices run clear. Rest it for a minute before serving.
