Rosa dei Venti is Callipo's three-tin pack of yellowfin fillets in olive oil, sized for the kitchen that opens one at a time. The fish is Thunnus albacares, selected for lean, firm flesh, and the tins hold whole fillets rather than broken chunks, so the pieces stay intact when you lift them out. Nothing is added beyond olive oil and salt. Drain and use them in a panino with tomato and basil, over a salade nicoise, through a cold pasta salad, or piled onto bruschetta with capers.
