Callipo has been canning tuna at Pizzo Calabro since 1913, and this is the deli-counter format: whole yellowfin steaks, tender and pale pink, packed by hand in olive oil. Yellowfin is the leaner of the premium tunas, so the flesh stays solid and breaks into large flakes rather than shredding. The hand-filling is visible on the inside of every tin, which carries the mark of the worker who packed it. Drain and fork it into a salad of white beans and red onion, build a vitello tonnato, fold it through spaghetti with capers and parsley, or serve it simply with good bread and lemon. The 620g tin is a catering or family size; once opened, move what you do not use into a covered container. Product of Italy.
