Guillaume’s Goat Cheese and Honey Pie

A sophisticated and balanced dish, perfect for any occasion.

• Short crust pastry • Onions • Olive oil • Goat cheese • Cooking cream • Grated Emmental cheese • Honey

  1. Finely chop the onions and caramelise them in olive oil over medium heat until soft and golden.
  2. Roll out the short crust pastry and fit it into a baking pan.
  3. Evenly spread the caramelised onions across the base of the pastry.
  4. Slice the goat cheese and arrange the pieces over the onions.
  5. Pour cooking cream generously over the filling to create a creamy base.
  6. Sprinkle grated Emmental cheese evenly over the top.
  7. Drizzle a small amount of honey for a harmonious blend of savoury and sweet flavours.
  8. Bake in a preheated oven at 200°C for 25-30 minutes, or until the pie is golden and bubbling.
  9. Slice, serve, and savour the perfect combination of textures and flavours.
