Ingredients

  • 2 cups Valle Cerde ricotta cheese
  • 300 g cream cheese
  • 2–3 tbsp olive oil (add slowly!)
  • ½ tsp dried basil
  • Pinch of salt & pepper
  • Pinch of paprika

  • Ready-made savory tart crust
  • A rainbow of heirloom tomatoes
  • Colored cherry tomatoes
  • Fresh basil leaves
  • Dollops of pesto
  • Chives

Cooking Instructions

In a blender, combine ricotta cheese, cream cheese, dried basil, salt, pepper, paprika, and olive oil. Blend until smooth and creamy. Add olive oil slowly to reach a thick but spreadable texture.

Spread the cheese mixture evenly over the tart crust. Chill in the fridge while preparing the tomatoes to let it set slightly.

Slice your heirloom tomatoes in varying sizes. Arrange them artfully on the tart, showcasing their colors and shapes. Fill in gaps with slices of colored cherry tomatoes for a balanced look.

Place fresh pesto across the tart for bursts of flavor. Sprinkle finely chopped chives over the top for a delicate touch. Lightly sprinkle dried basil and finish with fresh basil leaves for vibrant color and freshness.

Keep chilled until ready to serve. Slice carefully and enjoy the creamy, colorful, and flavorful tart!
