For the Turkey:
- Whole Turkey
- 150g Butter
- 1 Lemon
- 2tbs Mustard
- 50ml Extra virgin olive oil
- Mix all the ingredients and put them between the meat and the skin of the turkey.
- For the roasted turkey (6.5kg), cook it at 160°C. A measure for the ideal cooking time is around 30mins per kg of meat.
- Season the skin of the turkey with flakes of salt, black pepper and olive oil. Stuff the turkey with half an orange and a piece of rosemary.
For the garnishing:
- 400g Agria potatoes
- Orange carrots - 4 pieces cut into chunky sizes
- 2tbs Acacia honey
- Butter
- Salt & pepper
- Heat a frying pan and drop a piece of butter, rosemary and 2 tbs of honey. Lower the heat and let it cook with a lid for about 15 mins.
- Boil the potato for 10 mins and let them cool down. Heat the oven tray with butter and garlic and let the potatoes roast for 30 mins at 180°C.
For the sauce:
- 70g Egg york
- 2tbs Mustard
- Salt & black pepper
- 1tbs Vinegar
- Cook the eggs in a bain-marie with all the ingredients. Keep on whisking it for 15 mins til the egg is cooked. Let it cool down in the fridge.
- Serve all the ingredients separately.
