  • 200g pasta (linguini recommended)
  • 60g butter
  • 70g onion, finely chopped
  • 100g mushrooms, sliced
  • 1 cup cream
  • 1 cup chicken stock
  • 75g white truffle paste
  • Black truffle paste (optional, for garnish)
  • Chives (for garnish)
  • Salt and pepper to taste

  • Prepare the Base
  • Heat a pan over medium heat and melt the butter. Add the chopped onion and sauté until translucent. Stir in the sliced mushrooms and cook for 5-8 minutes until they soften and change colour.
  • Create the Sauce
  • Pour in the chicken stock and bring it to a boil. Let it simmer for 10 minutes. Stir in the cream and season with salt and pepper.
  • Add the Truffle Flavour
  • Mix the white truffle paste into the sauce. Adjust the amount to suit your taste.
  • Combine with Pasta
  • Cook the pasta according to the package instructions. Drain and add it to the sauce. Toss everything together until the pasta is evenly coated with the creamy sauce.
  • Serve and Garnish
  • Plate the pasta and, if desired, top with a dollop of black truffle paste. Sprinkle finely chopped chives for a fresh and elegant finish.
