Mushroom Broth:
- In a large pot, add water and infuse it with dry mushrooms and a piece of shallot.
- Bring it to a boil and then reduce the heat. Let it simmer.
Risotto:
- In a small pot, mince the shallot and sauté it with a drop of olive oil. Add the Arborio rice and salt to the pot. Toast them together.
- Gradually add ladles of the mushroom broth to the rice, stirring continuously.
- Continue to stir the rice mixture, adding water as needed, and let it cook together for approximately 13 minutes.
- Once the rice is cooked, finish by adding burrata, grated Parmigiano Reggiano, sliced black truffle, and a drizzle of truffle oil.
- Mix all the ingredients until well combined.
- Serve the risotto garnished with another shaving of black truffle.
