Tiramisu with Baked Lady Fingers

Lady Fingers:

  • 300g Egg White 
  • 300g Egg Yolk 
  • 140g Sugar 
  • 40g Flour

Mascarpone Cream

  • 90g Egg Yolk
  • 30g Water
  • 120g Sugar
  • 350g Mascarpone
  • 150g Cream


  • 20g Dark Chocolate
  • 10g Cocoa Powder


Step 1: Lady Fingers

  1. Whisk egg yolks with sugar until it is firm
  2. Next, whisk egg whites with sugar until it is firm
  3. Now, mix both in a bowl and strain flour into it and mix gently
  4. Preheat the oven to 210° C and bake Savoiardi for 8 minutes
  5. Leave the oven door slightly open to let heat escape and biscuits dry

Step 2: Mascarpone Cream

  1. To create zabaione whisk egg yolk, water, and sugar in a bain-marie bowl until cooked and then let it cool
  2. Now, mix mascarpone and cream until it is smooth
  3. Add zabaione sauce to it and refrigerate

Step 3: Assemble the Tiramisu

  1. First, lay coffee-soaked Savoiardi
  2. Now, layer the tiramisu with cream and grated chocolate
  3. Finish it off by sprinkling cocoa powder
