Ingredients:
Lady Fingers:
- 300g Egg White
- 300g Egg Yolk
- 140g Sugar
- 40g Flour
Mascarpone Cream
- 90g Egg Yolk
- 30g Water
- 120g Sugar
- 350g Mascarpone
- 150g Cream
Assemble:
- 20g Dark Chocolate
- 10g Cocoa Powder
Directions:
Step 1: Lady Fingers
- Whisk egg yolks with sugar until it is firm
- Next, whisk egg whites with sugar until it is firm
- Now, mix both in a bowl and strain flour into it and mix gently
- Preheat the oven to 210° C and bake Savoiardi for 8 minutes
- Leave the oven door slightly open to let heat escape and biscuits dry
Step 2: Mascarpone Cream
- To create zabaione whisk egg yolk, water, and sugar in a bain-marie bowl until cooked and then let it cool
- Now, mix mascarpone and cream until it is smooth
- Add zabaione sauce to it and refrigerate
Step 3: Assemble the Tiramisu
- First, lay coffee-soaked Savoiardi
- Now, layer the tiramisu with cream and grated chocolate
- Finish it off by sprinkling cocoa powder
