Manufactured in Fortwenger's workshops in Alsace, this festive special is made by pastry chefs in Gertwiller and Ensisheim. Gertwiller is now known throughout the world as the capital of gingerbread. Preparation of the mother dough, shaping of the various pieces, baking, and hand decoration with coloured sugar: these are the skills that require a lightness of touch and a love of the craft.
