To prepare this dish, begin by dicing the celery and onion into small cubes. Heat a saucepan over medium-high heat and add extra virgin olive oil. Add the diced celery and onion to the saucepan and cook for approximately 5 minutes, or until they begin to brown. Next, add the meat to the saucepan and continue to cook over medium-high heat for about 10 minutes, stirring occasionally. In a separate bowl, combine tomato and onion with half a glass of water. Mix well.
Pour the tomato and onion mixture into the saucepan and stir to combine with the meat and vegetables. Cover the saucepan with a lid and reduce the heat to low. Allow the mixture to simmer for approximately 90 minutes, stirring occasionally. If the mixture becomes too dry, add a little water or broth as needed. Once the dish has finished cooking, remove it from the heat and let it rest for 10 minutes. Then, serve and enjoy! It also goes well with polenta and bread.
